Peppermint Chocolate Chip Raw Cookie Dough Bites

Here’s a fun festive treat for the holidays!!! These raw cookie dough bites were a huge hit for Christmas! These are so good that I think I’ll actually make this all year long. The beauty of this delicious and healthy treat is that you can change it up with tiny tweaks to make them a holiday treat or an all year treat.

For Christmas time, the crushed candy canes are so fun… but during the rest of the year, some flakey sea salt on top would be just as amazing! Feel free to add your own flair and get creative too.

This treat is packed with protein so it’s satiating. It’s also packed with healthy omega 3 fatty acids from the almond butter which will also help you stay full as well as provide healthy anti-inflammatory benefits. The collagen is great for healing, repairing, and beautiful skin, hair, & nails. I opted for no sugar added dark chocolate because I try to stay away from un-necessary sugar but you can use any dark chocolate that you prefer.

The best thing about this is that these cookies look AMAZEBALLS and are SO EASY to make! No baking required! Once you make them, I guarantee you’ll want to keep on making them! LOL So I’m warning you now, these will be your new favorite go-to treat! ;)

ingredients:

1/3 cup almond butter (or substitute with any nut/seed butter)

2 tbsp melted coconut oil

2-3 tbsp honey or maple syrup

1/2 tsp vanilla extract

3/4 cup almond flour

2 scoops collagen peptides (I used Vital Proteins)

1/4 tsp flakey sea salt

3-4 tbsp crushed candy canes

1/4 cup mini chocolate chips

1 dark chocolate bar or 2/3 cup chocolate chips, melted

Directions:

  1. In large mixing bowl, combine the almond butter, coconut oil, honey or maple syrup, and vanilla extract and mix well.

  2. Next, add the almond flour, collagen peptides, and sea salt and mix well until a nice dough forms.

  3. Add in mini chocolate chips and then form into small balls. This makes about 12 small balls.

  4. Place balls on parchment paper lined tray and then place in freezer for about 30 minutes to harden.

  5. Remove from freezer and then top with melted chocolate and crushed candy canes. Be sure to add the crushed candy canes quickly before the chocolate hardens. You can also just use flakey sea salt instead of crushed candy canes.

  6. Place in freezer for another 20 minutes to harden. After that you can store them in the refrigerator. Enjoy!
