No Bake Golden Cookie Balls

Hey guys!!!

I’m loving the no-bake recipes lately. They are easy and quick and I don’t have to worry about cleaning up a baking tin. LOL

I feel so lucky to have partnered with Organifi and Nut Pods to bring you my latest creation - NO BAKE GOLDEN COOKIE BITES!!!

Here’s why you need to make these ASAP… I added some Organifi GOLD to help with relaxation and reducing stress/anxiety! We can all use a little calming down of our nervous system. These days it is common to be moving through life so fast (AKA constantly in stress mode). As a Health Coach, I know the importance of relaxing into the chaos and slowing down so we can heal from the inside out. HELLO Parasympathetic Nervous System (for my science peeps)!!!

Also, this treat is packed with protein, the building blocks of our body. Protein helps us stay satiated and I find that many of my clients aren’t getting enough. So this snack is a way to sneak in more of that healthy protein into your diet. We also have lots of healthy omega 3 fatty acids from the almond butter which will also help in keeping you full as well as provide healthy anti-inflammatory benefits. I added collagen which is optional but another bonus for healthy skin, hair, & nails. I opted for no sugar added dark chocolate because I try to stay away from un-necessary sugar but you can use any dark chocolate that you prefer.

ingredients:

1/3 cup almond butter (or substitute with any nut/seed butter)

2 tbsp melted coconut oil

2 tbsp Nut Pods Oat Creamer

1-2 tbsp honey or maple syrup

1/2 tsp vanilla extract

1 scoop Organifi GOLD

1 cup almond flour

2 scoops collagen peptides (I used Vital Proteins)

1/4 tsp flakey sea salt

1/4 cup mini chocolate chips (I used Lily’s Chocolate)

1 dark chocolate bar or 2/3 cup chocolate chips, melted

Directions:

  1. In large mixing bowl, combine the almond butter, coconut oil, Oat Creamer, maple syrup, and vanilla extract and mix well.

  2. Next, add the Organifi GOLD, almond flour, collagen peptides, and sea salt and mix well until a nice dough forms.

  3. Add in mini chocolate chips and then form into small balls. This makes about 12-15 small balls.

  4. Place balls on parchment paper lined tray and then place in freezer for about 30 minutes to harden.

  5. Remove from freezer and then top with melted chocolate. Be sure to add the flakey sea salt quickly before the chocolate hardens.

  6. Place in freezer for another 20 minutes to harden. After that you can store them in the refrigerator. Enjoy!
