Keto Coleslaw

It’s Labor Day Weekend… and I have an amazing, creamy, delicious, & keto coleslaw recipe for you just in time before you head to your holiday barbeque! 🇺🇸

Your friends will for sure compliment your dish and ask you for this recipe (so please share this blog 😉). As a health-conscious person, I always like to bring a dish that is somewhat healthy but doesn’t taste healthy… if you know what I mean. This fits the bill! 🙌

I was surprised when my 4 year old daughter actually liked it. You know how picky toddlers can get. The creaminess and the flavor I think is what made it a win for her. 🎉

Here’s the recipe:

ingredients:

1 (16 oz) package of coleslaw (shredded cabbage)

2-3 tsp minced onion or scallion

1/8 cup monkfruit

1/2 tsp pink salt

1/8 cup sour cream (I used “Good Culture”)

1/2 cup + 1 tbsp Mayonnaise (I used Vegenaise)

1 tbsp apple cider vinegar

2-3 tbsp lemon juice

1/8 tsp celery seed

directions:

  1. Combine the coleslaw and onion in a large bowl.

  2. In a separate bowl, combine the rest of the ingredients and mix until smooth.

  3. Pour over the coleslaw and onion. Stir well and chill in the fridge for 1 hour.

This is one of those dishes that starts to taste even better when you let it sit for awhile. So you can make this in advance and it will taste great when it’s time to eat! Honestly, this just means yummy leftovers! 😋
