Banana Oat Protein Bars

If you have kids, my guess is that they love bars! My kids love snacking on bars and instead of the processed ones, I thought I’d make a healthier version… one filled with protein, fiber, and real fruit!

And if you don’t have kids, this recipe is for you too! It’s a great high protein and fiber filled snack to keep you satiated between meals!

Here’s how I made it:

ingredients:

1 1/4 cup rolled oats

2 scoops Vanilla Protein powder (I used Kion Clean Protein - discount code KRISTINE)

2 bananas

1 egg

1/2 cup milk (I used unsweetened vanilla almond milk, but you can use your milk of choice)

3/4 greek yogurt

1/2 cup peanut butter

1 tsp vanilla

1/2 tsp cinnamon

1/4 cup chocolate chips

salt for topping

directions:

  1. Preheat oven to 350 degrees F.

  2. Mash bananas in a mixing bowl. Then add all wet ingredients (egg, milk, yogurt, peanut butter, and vanilla).

  3. In a separate bowl, mix oats, protein powder, and cinnamon.

  4. Combine wet and dry ingredients.

  5. Add chocolate chips and save some for topping.

  6. Pour into 9x13 baking dish.

  7. Top with remaining chocolate chips and salt.

  8. Bake at 350 for 20-25 min.

  9. Let stand to cool and enjoy. Store in refrigerator!
